The recipe I use from Joshua Weissman calls for 4 tablespoons of cayenne, and Official Welcome To Our Coop We Are All Cluckin’ Crazy Chicken T-Shirt it’s enough to get your nose running and mouth-tingling by the end of the meal but it’s still tolerable. I would say it’s hotter than “hot”. It rides the line between still enjoying the food and too spicy to enjoy. If pickled jalapeños are your max level of heat then I wouldn’t recommend 4 tablespoons of cayenne. BUT, you could take the recipe OP posted and add a sweetness to it, like honey so it tones down some of the heat, that way it’s a little more flavorful than hot.

I expected more from Chef John. No real seasoning in the marinade or flour mixture? C’mon! Uhhh hot sauce and pickle brine in a buttermilk marinade is quite a bit of seasoning lol. If you watch the Official Welcome To Our Coop We Are All Cluckin’ Crazy Chicken T-Shirt video, he explains that the flour mixture doesn’t need much seasoning other than the salt he adds, because the chicken is finished with the very heavily seasoned lard. But with the limited amount of the seasonings added and how strong cayenne is, you won’t really taste much else. You really should season at each step, even if the “glaze” is very flavorful.
